Perfect Fudge Brownies


I rarely post recipes, but I've been perfecting my brownie recipe. I don't know where I got the original since it's hand-written and it's been in my recipe binder for the last thirty years. If this looks like your grandmother's brownies, let me know and I'll give her credit!! But, this recipe makes perfectly fudge brownies with just a hint of saltiness. I also like to sometimes add about 1/2 a tsp. of mint extract for mint chocolate brownies.

Ingredients:

12 oz. bag of semi-sweet chocolate chips

2 sticks of butter

1 1/2 cups of white sugar

1/2 tsp. mint extract (if desired)

4 eggs

1 tsp. vanilla

1 1/2 cups of white flour

1/2 tsp. salt

1/2 tsp. baking powder

Directions:

Preheat oven to 350 degrees F. Grease 9x13 baking pan.

In saucepan, melt butter on the stove. Remove the pan from the stove and add the chocolate chips. Stir until the chocolate chips are melted. (Add to the stove if needed to melt the chocolate chips, but be careful not to burn them.) Add 1/2 tsp. mint extract if desired.

Add sugar. Add eggs one at a time, stirring well after each addition. Stir in vanilla extract.

Add flour, salt and baking powder together then stir till well-combined. Transfer batter to prepared pan.

Bake at 350F for 35-40 minutes or until toothpick inserted in center comes out clean.
